Cuban Pork and Black Bean Rice Bowls



With these tasty Cuban Pork and Black Bean Rice Bowls, you can taste the bright flavors of Cuba. Black beans and tender pork marinated in a sauce are served over white rice, making a filling and tasty meal.

Ingredients:

  • 2 lbs pork shoulder, cut into chunks
  • Salt and pepper to taste
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 4 cloves garlic, minced
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 1 bell pepper, diced
  • 2 cans black beans, drained and rinsed
  • 4 cups cooked white rice
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions:

Season the pork chunks with salt, pepper, cumin, oregano, and minced garlic

In a bowl, mix orange juice, lime juice, and olive oil

Pour this mixture over the seasoned pork and marinate for at least 30 minutes

In a large skillet, heat some oil over medium-high heat

Add the marinated pork and cook until browned on all sides

Remove from the skillet and set aside

In the same skillet, add chopped onion and diced bell pepper

Saut until softened

Return the browned pork to the skillet and add black beans

Cook until the pork is fully cooked and beans are heated through

Serve the Cuban pork and black bean mixture over cooked white rice

Garnish with fresh cilantro and serve with lime wedges on the side
