Ingredients:
- 1 lb shrimp, peeled and deveined
- 8 oz pasta
- 2 ripe avocados
- 1 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 3 cloves garlic
- 1/4 cup olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
- Red pepper flakes optional, for added heat
Instructions:
Follow the directions on the package to cook the pasta
Remove the water and set it aside
Put garlic, olive oil, lime juice, salt, pepper, parsley, cilantro, avocados, and put them all in a food processor
To make the chimichurri sauce, blend everything together until it's smooth
Put some olive oil in a big pan and heat it over medium-low heat
It will take about 34 minutes per side to cook the shrimp until they are pink and fully cooked
Put cooked pasta in the pan with the shrimp
Chimichurri sauce should be added to the pasta and shrimp
Mix and toss until everything is well mixed and hot
Serve right away, and if you want, top with red pepper flakes
