Ingredients:
- 1 cup 2 sticks unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
- 1 cup white chocolate chips
- 1 cup sweetened shredded coconut
Instructions:
Preheat your oven to 350F 175C and line baking sheets with parchment paper
In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy
Beat in the eggs one at a time, then add the vanilla extract and mix until well combined
In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Stir in the semisweet chocolate chips, white chocolate chips, and sweetened shredded coconut until evenly distributed throughout the cookie dough
Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart
Bake in the preheated oven for 10 to 12 minutes, or until the edges are set and the centers are slightly soft
Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely
Once cooled, enjoy these delicious Triple Chocolate Coconut Cookies with a glass of milk or your favorite hot beverage!
